Paiagallo is an important MGA located in the town of Barolo, with a
total area of 12.35 hectares. Placed on the eastern side of Barolo, this
MGA stands out for its sweet and rounded slopes. Here, on marl and
sandy soils, the vineyards of Mauro Veglio rise, facing south east-east.
The pedoclimatic conditions in this area have aided in yielding wines
of great structure and intense aroma.
Variety: 100% Nebbiolo
Age of vineyards: Planted in the middle of 1980s
Vine training system: Guyot
Vinification: Maceration on the skins in stainless steel tanks at a controlled temperature for
20-25 days, starting with cold maceration (10°C) during the first 48 hours. This period sees a
very delicate extraction, with only a couple of pumping done every day. Racking then follows
and the malolactic fermentaion takes place in stainless steel tanks. Afterwards, around the
month of December, the wine is stored in an oak barrel, with a capacity of 30hl, where it will age
for a total of 24 months. After decanting in stainless steel tanks, the wine can be bottled without
undergoing processes of filtration or clarification.
Color: Light ruby red and faint garnet notes.
Aroma: Extremely fruity and delicately harmonious. Hints of strawberry and raspberry.
Flavor: Absolutely fine and elegant. It has good persistence, but with a finale characterized by remarkably soft tannins.
Serving temperature: 16°-18°C. It is particularly enjoyable to savor its iniial freshness and then
appreciate the evolution of its aromas as the wine slowly warms in the glass.
Evolution: Drinking well already, but with the potential for great longevity.
