Dolcetto d'Alba DOC

The vineyards are located on the cooler, less sunny, north-facing slope of the hill of Cascina Nuova, the seat of our winery; and in Castelletto di Monforte on the cooler slopes. Here, we cultivate juicy grapes that give us a velvety, light Dolcetto d’Alba that is best enjoyed young and fresh.

Variety: 100% Dolcetto  

Age of vineyards: planted in the early 2000s

Vine training system: Guyot

Vinification: maceration on the skins in rotary fermenters at a controlled temperature for about 4 days before the grapes are pressed and alcoholic fermentation is concluded in stainless steel (about 20 days), where malolactic fermentation also takes place at a controlled temperature. The wine is transferred to stainless steel until the following summer, when it is bottled without fining or filtration.

Color: intense ruby red with deep violet hues

Aroma: ample, floral, with captivating vinous scents and noticeable aromas of violet and bonbons

Flavor: fresh, soft, and smooth, overall balanced and with light tannins, where young, vegetal notes blend elegantly with the correct amount of alcohol

Serving temperature: 16°-18°C. It is particularly enjoyable to savor its initial freshness and then appreciate the evolution of its aromas as the wine slowly warms in the glass.

Evolution: best drunk in the first years after release, but may offer surprising nuances even after several years in the bottle
